In my experience, every time I have hit grass while racing, wet or dry, you would swear that you actually accelerate. Of course you dont, but that is the sensation you get.

Yes I agree, it is a very scarey thing, the brain expects to feel strong forces of turning or braking.

Because the forces are so much less than expected, the illusion at least at first, is of the car speeding up.

What happens next depends very much on the driver's training, skill, and mental approach :)

I think The Rat did very well to minimise the big bang. No suprises there, he has been around a long time, and two seconds on or off a race track is a very long time indeed.
Mind you, he will be very sore and broken for a couple of months. I am glad I am not him at the moment!
