Close to Las Vegas is Bryce National Canyon and Zion National Park. I have stayed overnight near Bryce Canyon and at Zion National Park we actually camped for a few nights on the canyon floor. If you can get further north then Yosemite National Park is very cool to camp/tramp in.

Around LA there are plenty of mountains to climb. Joshua Tree National Park is about 150 miles out of LA and is well worth a day trip to drive out. Cool piles of boulders to climb over if you like a bit of free climbing (bouldering)

It will be stupid hot in Vegas in August.

If you want to ride head north to Brianhead, Utah. It is at nearly 3000m elevation and has a nice little village that has accomodation and rents bikes. From there you have lift assisted downhill-type trails as well as some epic singletracks that are serviced by a couple shuttle companys.
