Time for me to find a bit more information.
I'm keen to do just one island
Looking at the route, which island would people pick if you had to choose?
What are the advantages/disadvantages of doing one Island over another?

I would lean towards riding the island route I've done least of.

Cost is presumably an issue which might conflict with the previous suggestion.

Due to there being greater population in the North Island, would I be right to assume there would be a lot more places to buy food, supplies and accommodation on the North Island route? If I could get away without camping and cooking equipment it would make this a lot easier.

It really depends on how much distance you can cover in a day really, there are still a few sparsely populated parts of the north island, but maybe not as isolated as the south island, and I'm sure the south island has bigger hills
