I like the way you think, specifically it is Beech forest trails that really spin my wheels! Here is a short selection of my favourites.
Fern Hill Loop - Queenstown
Croesus - Near Greymouth
Craigieburn tracks
Warfedale
Mt Grey
Kirwans Track near Reefton
Waiuta to Big River, near Reefton
Wakamarina, Blenheim.
Nydia Bay, Blenheim
Queen Charlotte WalkBikeway
Yet to do, but I hear these are fun.
Whites bay - Blenheim
Cullens Creek - Blenheim
Kill Devil - Takaka
Non- forest trails around Alexandra really float my boat too, but make sure you have a local to show you where they are, or you will miss all the good stuff!!

Wharfedale - Oxford (which you probably know anyway)
Craigeburn - which you probably also know!
Croesus - behind Blackball, West Coast
Kirwins - near Reefton
Queen Charlotte, Wakamarina, Nydia Bay - all Marlborough
Blowhard / Mt Richardson - past Oxford
Fernhill Loop - Queenstown (shorter ride - just over 1 hour)
Rameka Track - Takaka Hill
Lots more as well - nothing like a day out on bush singletrack.
Inzane knows lots of back country bush epics.

Mate, when I get fit enough I plan on getting together with you lot and hitting it - watch this space . I spent 2.5 hours in Sticky Forest a few weeks back and thats when it hit me - forest trails ROCK
Interesting you mention the trails in Takaka, I am going up there for the gathering ( as it used to be called ) and bringing the bike
OOOHHHHHHHHHHHHH I JUST CAN'T WAIT

The Rameka will be your quickest way into Takaka (for your morning espresso !) from "the gathering" location - not overly long, but nice beech forest track, with a long, forearm cramping, gravel road descent. One of the Kennett bros has just bought land somewhere near there, with a vision of regenerating forest, opening old routes, and other tracks to tack onto the Rameka experience.
Another good ride in that region has a small section run through a corner of Kahurangi National Park, and therefore is not fully open to mtbikers - though that may change with the review currently underway. Starts at (margarine brand) Saddle and ends at Barron's Flat, near upper Takaka.

I find that forests set up the most fun sort of trails!! There is something awesomely fun about wizzing through trees at mega speed, jumping over roots and rocks and drifting in the leaf litter.

Plus its damn good to go different places and get away from other riders, walkers, dogs, cars, etc. Nothing like being on the top of a mountain on a fine day with a few mates and an epic hour long single track downhill to look forward to.
