undo cassette

remove gears you don't want

use cassette/single speed spacers to take up the left over space

There will be a small allen key on the main body of the cassette, undo it, and find spacers from an identical cassette.

some cassettes have a very tiny allen bolt going right through from gear 1 to gear 6 or seven, you will need a super small allen key to undo this. Others are held together with 3 rivet type things once again going from gear 1 to gear 6 or 7, you can bang these out with a hammer and nail punch. after that do what wobbler said.

can pick the gear ratios you want, if you wanted smaller/bigger/different changes between ratios.

Gives extra clearance from the spokes with the chain and deraliur. You can remove the gears that are 1 tooth apart at the bottom of a road cassette to have 2 teeth steeps instead of one. Gives faster shifting without getting too bigger gaps.

If you have a 8 speed cassette, with the tiny bolt through the 1st 6 gears, is it possible to take off just the largest cog and then put a spacer in?

Yes but you may have to transfer the bolt hole to your new largest gear if the spacers will get in the way of the bolthead.
If it is you'll have to step the hole for the bolt to recess into.
And you'll have to find a shorter bolt.

You could try not running the bolt altogether but that could lead to freehub body notching.
If I remember rightly the PG-970 DH is not bolted together.

correct.

I think you can just go to a roadie shop and buy individual sprockets. Slap them on with spacers between and to take up the space left over. Fine if you have a steel freehub bout not good it you have an alloy or Ti one. Retune deralier to fit.
