Cycling Through Steinbeck's 'Pastures Of Heaven' - 4 Jul, 2007 - Malindi Maclean
When not traversing across the country to various races, the Jazz Apple Cycling team returns to home base in Monterey California. Our team training rides navigate the surrounding mountains and valleys, through John Steinbeck’s ‘Pastures of Heaven’, though no forbidden apples for us!
The team van is readily on hand with cold water and Jazz Apples to keep us going through desert-like heats. Our training sessions range from 1 hour recovery rides to 5 hours of hard labouring at the hands of the Californian terrain. The combination of mountains, coast and windy valleys offer the perfect arena for cycling training and the incentive of freshly baked Jazz muffins keep us working hard for over 100miles, check out the recipe below.
Out on the road putting in the hard yards is a team enterprise; Mechanic Paul Larkin ensures the bikes are always running crisp, manager Chris Drake and Coach Susy Pryde oversee and co-ordinate the training sessions to have the athletes well recovered and fresh for the weekend racing. Next we head to Sonoma for the Cougar Mountain Classic, and despite a disappointing lack of mountain lions, we are definitely ready to tackle the mountains, perhaps the more challenging of the two! Rushlee Buchanan's Jazz Muffins, super easy and super tasty!
Ingredients
2cups of Bran
1cup flour
2tsp baking powder
1tsp baking soda
Afew sprinkles of cinammon and mixed spice
3 grated fresh JAZZ apples!
2/3 can low fat condensed milk
1 egg
1/2cup warm water
2Tbsp honey
Directions
Mix the dry ingredients together in one bowl and the wet ingredients togther in another, then mix the two together.
Pour into muffin tins and bake for 15-20mins at 180degrees celsius
